Corn Chicken Bowl (Printable Version)

Zesty bowl loaded with chicken, cotija, and corn on steamy rice. Top it off however you like for a Mexican-style meal.

# What You'll Need:

→ Chicken Marinade

01 - Four boneless, skin-free chicken thighs
02 - Two big spoonfuls of fresh lime juice
03 - A glug (2 tbsp) of avocado oil
04 - A teaspoon of chili powder
05 - A teaspoon of garlic powder
06 - Add salt as you like it
07 - Give it some black pepper—totally your call

→ Street Corn Topping

08 - Grilled or plain corn, two cups worth of kernels
09 - A handful (60 ml) thin-sliced red onion
10 - A half cup (60 ml) each of cotija cheese, mayo, and sour cream
11 - One teaspoon chili powder
12 - Salt—just toss some in to taste
13 - Some fresh black pepper, however much you want
14 - All the lime juice (2 tbsp)
15 - Crumble up that cotija cheese (60 ml)

→ Rice & Assembly

16 - Four cups jasmine rice, cooked and ready
17 - A handful of fresh cilantro, chopped up for sprinkling
18 - Squeeze on lime wedges when you serve

# Step-by-Step Guide:

01 - Toss lime juice, oil, both spices, salt, and as much pepper as you want in a bowl. Dunk the chicken in and coat every bit. Cover and chill it for 15 to 30 minutes.
02 - Heat up a skillet on medium-high. Pop the chicken in and cook till it's browned and cooked all the way, about 8–10 minutes per side. Let it sit a minute before you cut it up.
03 - Add corn, onion, cotija cheese, mayo, sour cream, chili powder, salt, pepper, and those squeezes of lime to a mixing bowl. Stir everything until it’s all mixed and creamy.
04 - If your rice is leftover or cooled off, just add a little water and reheat it in a pan or zap it in the microwave till piping hot.
05 - Start by scooping rice into your bowls. Add the cut chicken. Pile on street corn mix, toss over extra cotija plus cilantro, then add a lime wedge for a pop.
06 - Right before digging in, hit each bowl with a squirt of fresh lime for that punchy flavor.

01 - Want it spicier? Toss in pieces of jalapeño or sprinkle on cayenne in your corn mix.
02 - Swap in cauliflower rice to keep the carbs low—it's an easy fix.
