Spicy Salmon Rice Bowl (Printable Version)

Hot salmon, fluffy rice, creamy avocado mix, and spicy sauce come together in this 40-minute bowl.

# What You'll Need:

→ Salmon

01 - 4 (4-6 oz) chunks of salmon, diced into bite-sized pieces
02 - 6 tbsp olive oil, split up
03 - 1-2 tbsp diced chipotle peppers in adobo sauce
04 - 2 tbsp + 2 tsp sweet honey, split up
05 - 1 tbsp soy sauce or tamari
06 - Salt and pepper to your liking
07 - 1 tbsp apple cider vinegar
08 - 1/2 cup chopped fresh cilantro
09 - 3-4 cups rice, already cooked

→ Avocado Feta Salad

10 - 2 ripe avocados, cut into cubes
11 - 2 small cucumbers, diced up
12 - 1 jalapeño or serrano pepper, thinly sliced
13 - 1/2 cup cilantro leaves, finely chopped
14 - 1/2 tsp cumin powder
15 - 1/2 cup feta cheese, broken into crumbles
16 - 2 tbsp olive oil
17 - 1 tbsp juice from fresh lemon
18 - 1 tbsp freshly squeezed lime juice

→ Chipotle Mayo

19 - 1/2 cup mayonnaise
20 - 1-2 tbsp minced chipotle in adobo sauce
21 - 2 tsp pure honey

# Step-by-Step Guide:

01 - Warm up the oven to 450°F (232°C).
02 - Mix salmon chunks with 3 tbsp olive oil, chipotle peppers, 2 tbsp honey, soy sauce or tamari, plus a bit of salt and pepper on a baking tray. Lay them flat and cook for 10-15 minutes until done. Pop under the broiler for the last minute to get some nice browning. Put aside when finished.
03 - Mix 3 tbsp olive oil with 2 tsp honey and apple cider vinegar in a small container. Add the cilantro, throw in some salt and pepper, then set it aside.
04 - Throw avocado cubes, cucumber pieces, hot pepper slices, cilantro, and cumin in a bowl. Pour in olive oil with lemon and lime juices, add some salt, and stir gently. Lastly, mix in your feta crumbles with care.
05 - Stir together mayonnaise, chipotle peppers, and honey until it's all blended smooth.
06 - Fill your bowls with rice first. Add salmon chunks and some avocado feta mix on top. Pour some cilantro sauce over it and drop a spoonful of chipotle mayo on. Eat right away while it's fresh!
