Grab a big bowl and stir together the lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne until well blended. Toss in the chicken thighs and make sure they're completely covered in the mixture. Wrap and chill for at least 20 minutes but you can leave it up to 4 hours for stronger flavor.

Turn your oven on to 400°F (204°C) and let it warm up.

Pour the vegetable oil into a big oven-ready skillet over medium to medium-high heat. When it's hot, drop in the chicken pieces but save the leftover marinade. Cook them for about 2-3 minutes on each side until they get some color but aren't fully done inside.

Put the skillet in your hot oven and let the chicken cook for another 8-10 minutes. It's done when a meat thermometer shows 165°F (74°C) inside the thickest part.

Pour the saved marinade into a medium pot over medium heat. Let it come to a boil, then lower the heat and cook for 5-10 minutes until it gets thick and sticky.

Paint the thickened sauce over your cooked chicken pieces and serve them while they're still hot.
