Homestyle Chile Colorado (Printable Version)

Slow-cooked beef in smoky red sauce goes great with beans, rice, or tortillas. The deep flavor comes from letting it cook low and slow.

# What You'll Need:

→ Main Ingredients

01 - 1 bay leaf
02 - 1/2 teaspoon salt
03 - 1/2 cup yellow onion, chopped
04 - 3 garlic cloves, minced
05 - 1/2 teaspoon ground cumin
06 - 1 teaspoon dried oregano
07 - 1 1/2 tablespoons chili powder
08 - 2 tablespoons tomato paste
09 - 2 tablespoons apple cider vinegar
10 - 1 can (about 113 g) diced green chiles
11 - 2 tablespoons chipotle adobo sauce
12 - 1 1/2 cups beef broth
13 - 2 lbs beef stew meat, cut up

# Step-by-Step Guide:

01 - Throw in the bay leaf, salt, onions, garlic, cumin, oregano, chili powder, tomato paste, vinegar, green chiles, chipotle adobo, and broth into your slow cooker. Give everything a good stir until it looks blended.
02 - Now plop the beef chunks in and swirl things around so every piece is coated with the sauce.
03 - Pop on the lid and leave it alone on low for 7 to 8 hours. The beef should be nice and tender when it's done.
04 - Fish out the bay leaf. Spoon the beef with sauce onto tortillas, over rice, or with beans—whatever you like best. Enjoy while it's hot!

# Additional Notes:

01 - If you want even more flavor, sear the beef quickly in a hot pan before tossing it into the slow cooker.
02 - Stick any leftovers in a sealed container and they'll be good in the fridge for three days.
