# What You'll Need:

→ Chicken and Seasoning

01 - 4 skinless, boneless chicken breasts, flattened to ¼ inch thick
02 - Salt and pepper, as needed

→ Breading

03 - 1 cup regular flour for coating
04 - 2 big eggs, whisked well
05 - 2 cups panko crumbs
06 - 1 teaspoon powdered garlic
07 - 1 teaspoon powdered onion
08 - 1 teaspoon dried Italian herbs

→ Cooking and Assembly

09 - 4 tablespoons olive oil
10 - 4 sandwich rolls, cut open
11 - 1 cup tomato sauce, with extra for dipping
12 - 8 slices melty mozzarella
13 - ¼ cup grated Parmesan
14 - Chopped fresh parsley for topping

# Step-by-Step Guide:

01 - Get your oven hot at 400°F (200°C).
02 - Sprinkle chicken with salt and pepper. Roll in flour, soak in egg wash, then coat with a mix of panko, powdered garlic, powdered onion, and Italian herbs.
03 - Warm olive oil in a big pan over medium-high. Cook chicken until both sides turn golden and meat is done, roughly 4 minutes each side. Put on paper towels after cooking.
04 - Lay rolls on a baking tray. Smear sauce on bottom halves. Top each with a chicken piece. Add more sauce over chicken. Cover with two mozzarella slices per sandwich and scatter Parmesan on top.
05 - Stick the tray in the hot oven and cook until cheese melts and bubbles, about 5-10 minutes.
06 - Sprinkle parsley on top and serve while hot with extra sauce for dipping.

# Additional Notes:

01 - Make sure to flatten chicken to the same thickness for even cooking and better fit in your sandwich.
02 - Get your rolls crispy before adding ingredients so they won't get mushy.
03 - Pick a chunky tomato sauce to keep sandwiches from getting wet.
04 - You can prep and fry chicken ahead of time to make things faster.
05 - Want to use an air fryer? Cook at 375°F for 15–18 minutes, turn halfway and give a light oil spray.
