01 - 1 big chicken breast without skin or bones (about 1 lb.)
02 - ½ cup blue cheese sauce (ranch works too)
03 - 2 tbsp butter, split
04 - ½ cup chopped yellow onion
05 - 1 celery stalk, chopped small
06 - 3 garlic cloves, finely chopped
07 - 1 can (14.5 oz) chopped tomatoes with juice
08 - 4 cups chicken stock
09 - 1 lb. penne noodles
10 - ½ cup hot buffalo sauce
11 - 8 oz. cream cheese, soft and cut into chunks
12 - 1.5 cups cheddar cheese, grated
13 - 1 cup mozzarella cheese, grated
14 - 1 tiny bit red pepper flakes (if you want)
15 - 2 tbsp cold butter (if you want)

# Step-by-Step Guide:

01 - Drop chicken into water and gently cook until done, around 15 minutes. Take it out and pull apart using forks. Mix the shredded meat with blue cheese sauce and put aside.
02 - Heat up 1 tbsp butter in a deep, wide pan on medium. Throw in chopped onions and celery. Let them cook for 5 minutes till soft. Add chopped garlic and cook one more minute.
03 - Pour in chopped tomatoes with their juice and chicken stock. Let it bubble up, then add pasta. Make sure all noodles are under the liquid. Cover and let bubble for 10-13 minutes until pasta's just right, stirring now and then so it doesn't stick.
04 - Turn heat down low. Stir in buffalo sauce, cream cheese chunks, and both grated cheeses. Stir gently until everything melts and gets thick.
05 - Toss in the shredded chicken and red pepper flakes. Mix everything well. If you want it smoother, add 2 tbsp cold butter and swirl it in. Serve it hot.

01 - You'll get a creamier sauce if you grate your own cheese instead of buying the pre-shredded stuff.
02 - Want more sauce? Use a bit less pasta, which is great if you're saving leftovers.
