→ Chicken Sticks

01 - 1 lb chicken breasts without bones or skin, diced into 1-inch chunks
02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon onion powder
05 - 1 teaspoon smoky paprika
06 - Salt and pepper as needed
07 - Wood or metal skewers (soak wooden ones in water for 10-15 minutes first)

→ Spicy Cream Sauce

08 - ½ cup mayo
09 - 2 tablespoons sweet chili sauce
10 - 1 tablespoon sriracha (add more or less depending how spicy you want it)
11 - 1 tablespoon honey
12 - 1 teaspoon rice vinegar
13 - Small amount of salt

# Step-by-Step Guide:

01 - Slice your chicken into equal 1-inch chunks so they'll cook the same. Mix them with olive oil and all the spices. Let them sit for at least 30 minutes to soak up the flavors.
02 - Grab a small bowl and stir together the mayo, sweet chili sauce, sriracha, honey, rice vinegar, and a bit of salt. Make it as hot or mild as you want and put it aside.
03 - Slide the seasoned chicken onto your skewers. Don't pack them too tight but keep them close enough to cook well.
04 - Get your grill nice and hot on medium-high. Cook the chicken sticks for about 3-4 minutes on each side, turning now and then until they reach 165°F (74°C) inside.
05 - Pour the spicy sauce over your cooked chicken or use it as a dip on the side. You can top with some sesame seeds, green onions, or cilantro if you want.
