Turn your oven to 375°F (190°C). Coat a big baking sheet with a bit of oil and put it aside.

Dump potato wedges in a big bowl. Pour olive oil over them and mix until they're all coated.

Grab a small bowl and stir together the salt, garlic powder, and Italian herbs. Toss potato wedges with Parmesan cheese until covered. Then sprinkle your spice mix over them.

Lay the coated potato wedges on your oiled baking sheet. Make sure they're in one layer with skin facing down.

Stick them in your hot oven for about 25-35 minutes. They're done when you can easily poke them with a fork and they look golden.

Scatter fresh parsley on top and serve with whatever dip you like.
