01 - 4 big Russet potatoes, cut into thick wedges
02 - 4 tablespoons olive oil
03 - 2 teaspoons sea salt
04 - 2 teaspoons garlic powder
05 - 2 teaspoons Italian herbs mix
06 - 1/2 cup grated Parmesan
07 - 2 tablespoons snipped fresh parsley (or cilantro if you want)

# Step-by-Step Guide:

01 - Turn your oven to 375°F (190°C). Coat a big baking sheet with a bit of oil and put it aside.
02 - Dump potato wedges in a big bowl. Pour olive oil over them and mix until they're all coated.
03 - Grab a small bowl and stir together the salt, garlic powder, and Italian herbs. Toss potato wedges with Parmesan cheese until covered. Then sprinkle your spice mix over them.
04 - Lay the coated potato wedges on your oiled baking sheet. Make sure they're in one layer with skin facing down.
05 - Stick them in your hot oven for about 25-35 minutes. They're done when you can easily poke them with a fork and they look golden.
06 - Scatter fresh parsley on top and serve with whatever dip you like.
