Egg Bacon Potato Cups (Printable Version)

Treat yourself to egg cups made with shredded potatoes, bacon bits, cheddar, and chopped onions for a tasty morning meal.

# What You'll Need:

01 - 8 big eggs
02 - 1/3 cup milk
03 - 2 cups thawed frozen hash browns
04 - 1 cup grated cheddar cheese
05 - 6 strips bacon, fried and broken up
06 - 1/4 cup diced green onions
07 - 1 tsp garlic powder
08 - 1/2 tsp salt
09 - 1/4 tsp black pepper

# Step-by-Step Guide:

01 - Get your oven going at 375°F. Coat a 12-cup muffin pan with butter or pop in paper liners.
02 - Grab a big bowl and beat the eggs with milk until smooth.
03 - Toss in your hash browns, about 3/4 cup cheese, the bacon bits, green onions, garlic powder, salt and pepper. Stir it all up.
04 - Scoop the mixture evenly into each muffin spot.
05 - Scatter the leftover cheese across the top of each cup.
06 - Stick in the oven for 20-25 minutes until they're firm and golden on top.
