Avocado Tuna Stack (Printable Version)

Layers of tuna, pico de gallo, and avocado tossed together for a fresh, flavorful lunch that’s light and satisfying.

# What You'll Need:

01 - 1/2 cup pico de gallo
02 - 1 avocado
03 - 2 tablespoons lime juice, split up
04 - 1/8 teaspoon salt, and a little extra if you want
05 - 1 tablespoon fresh cilantro, chopped up
06 - 5 ounces albacore tuna, make sure it's drained
07 - 1 tablespoon mayonnaise

# Step-by-Step Guide:

01 - Scoop half the mashed avocado onto each plate. Pile half the tuna mix on top of that and spoon on plenty of pico de gallo. Do the same for the next plate.
02 - Take the avocado, peel it, pop out the pit, and cut it into pieces. Toss the chunks into another bowl, squeeze in the rest of your lime juice, and mash them up until they're mostly smooth but still a little chunky. Sprinkle on some salt.
03 - Toss the drained tuna, mayo, cilantro, half the lime juice, and a dash of salt into a bowl. Mix everything up so it’s blended together. Taste and toss in extra salt if you need.

# Additional Notes:

01 - Pick ripe avocados and go for the good canned tuna so it tastes fresh. You can throw on extra cilantro or some cracked black pepper if you feel like it.
