Slice the avocados, take the pits out, and scoop the insides into a food processor. Toss in the coriander, chilli, a squeeze of lime, and a bit of salt. Run the processor until it's all blended and creamy.

Grab your bread and lay it out. Smear some of the avocado mix over a cheese slice, set it on a piece of bread, top with another cheese slice, and put another slice of bread on top. That’s your sandwich.

Butter the pan and get it nice and hot on low-medium. Drop in the sandwiches, pop a lid on, and cook till the bottoms are golden brown and crispy.

Add more butter if you need. Flip the sandwiches, press down gently, and let the other side get just as crisp and golden.

When both sides look perfect, take them out of the pan. Grab a serrated knife to cut each sandwich in two. Enjoy while they’re still warm.
